A Perfect Half Term Recipe For A Cold, Wet Day : marshmallow toffee rice crispy cakes
Whether you've kids home for half term or not, these are simple and quick to make and rather delicious. I'd particularly like to hear from anyone who manages not to eat at least two toffees and a marshmallow out of the saucepan before they start to melt :o)
Mary says hers make 48. Mine made 20 (now 18). Either Mary makes cakes for dolls or my family have an unnatural relationship with portion size. I'm plumping for the former.

ps- I'm hoping the recipe will enlarge because I've been lazy and avoided typing it. If it doesn't, let me know and I'll edit the post to include it. I know some of the words are missing off the edge of the photo but they're self explanatory so hopefully it'll make sense.

Daughter is home and baking in the kitchen right now. Just as well as her (hungry) brother is coming home any minute. Husband picking asparagus, salad and rhubarb on way home as I fell off my bike (downhill, at speed) on Friday and am still very sore. Loved your butterfly post the other day and saw lots of blue butterflies on the chalk at the weekend. Come back sun, please.

DeleteDon't tempt me! I have sworn to keep off sugar and after three weeks I find I no longer have a sugar craving. But I must say they don't half look good!

DeleteToday started off grey but fine here, then from lunch time onwards it has bucketed down. The crispy cakes look just the thing for a rainy Tuesday - nom, nom,nom! I'll have to stock up on veggie marshmallows first. xx

DeleteYUM. You are a top mum CT. I make cookies from a Martha Stewart recipe that says it should make 48, and I only ever get a maximum of 24. These people are weird small-cake eating freaks. Stop messing about a make a decent sized one! We have somehow managed to eat an entire coffee cake and a cherry cake three days flat. I can't keep up with the baking. CJ xx

DeleteI used to make Rice Crispy Treats which is like this but no toffee. They are so good and I can only guess yours are even better with the added toffee.

DeleteWhen I first glanced at the recipe title I saw 'Two-Tonne Marshmallow Chews'!! I fear that is how I would end up if I made these... We do need cheering up with this horrid weather, though... Xx
